Savor spiced chicken bites paired with a cool carrot salad.
Ingredients:
  • 350g lean minced chicken
  • 80g fresh breadcrumbs
  • 6 spring onions, thinly sliced
  • 40.00 ml chopped coriander
  • 1cm piece ginger, grated
  • Sweet chilli sauce, tomato sauce or yoghurt, to serve (optional)
  • 9.20 gm sunflower oil
  • 1 tsp sesame oil
  • 21.00 gm fresh lime juice
  • 2 carrots, trimmed, sliced into thin strips
  • 125g snow peas, trimmed, sliced into thin strips
  • 6.00 gm sesame seeds
Instructions:
  • In a bowl, combine sunflower oil, sesame oil, lime juice, salt, and pepper. Whisk until well combined.
  • Boil carrots and snow peas for 1 minute in salted water, then cool in cold water and drain. Mix with sesame seeds in a bowl and set aside.
  • Combine minced chicken, breadcrumbs, spring onions, coriander, garlic, ginger, and egg in a food processor until mixed.
  • Form the chicken mixture into 12 equal ovals using your hands wet with water to prevent sticking. Arrange them on a lightly oiled baking sheet and chill in the refrigerator for 10 minutes.
  • Preheat your oven to 200°C.
  • Bake the chicken bites until they are lightly browned, for about 25 minutes.
  • Serve the dish hot or cold with a side of carrot and snow pea salad and your choice of sweet chilli sauce, tomato sauce, or yogurt for dipping, if preferred.
