Spicy Buffalo tofu wraps with spinach, Swiss cheese, and tomatoes - a budget-friendly sandwich delight.
Ingredients:
  • cooking spray
  • 1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank's®), or to taste
  • 1 (12 ounce) package extra-firm tofu, cut into cubes
  • 4 slices Swiss cheese
  • 4 honey-wheat tortillas
  • 5 Campari tomatoes, sliced
  • 1 cup fresh spinach, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and get your baking sheet ready with a light coating of cooking spray.
  • In a large bowl, generously coat tofu with Buffalo wing sauce, ensuring it's fully covered. Gently toss the tofu to ensure even coating, then let it marinate while the oven preheats.
  • Transfer the tofu from the bowl to the baking sheet and evenly spread it out. Drizzle extra sauce over the tofu cubes and give them a light spray of cooking oil.
  • Bake tofu in a preheated oven for 20 minutes, flipping the cubes halfway through and spraying the tops with cooking spray to achieve a firm texture.
  • Place a slice of Swiss cheese on top of each tortilla and microwave until cheese is melted, approximately 30 seconds.
  • Place the tomato slices evenly on the tortillas, then add a generous portion of the baked tofu and fresh spinach to each. Roll up the tortillas to encase all the delicious fillings.
