Spicy beef noodles for a flavorful kick.
Ingredients:
  • 180g dried rice stick noodles
  • 60ml peanut oil
  • 500g beef strips
  • 100g curry paste
  • 250g baby corn, halved lengthways
  • 48.80 gm fish sauce
  • 15.00 gm caster sugar
  • 60ml beef stock
  • 6 makrut lime leaves, finely shredded (see Notes)
  • 75g peanuts
  • Coriander sprigs, to serve
  • Lime halves, to serve
Instructions:
  • Place the noodles in a large bowl of boiling water, cover, and let sit for 5 minutes until softened. Drain the noodles.
  • Heat 1 tablespoon of oil in a wok over high heat. Add half the beef and stir-fry for 1-2 minutes until browned. Set aside, then repeat with another tablespoon of oil and the rest of the beef. Stir in curry paste and remaining oil for 30 seconds until fragrant. Add corn and beef, stir-fry for 1 minute. Stir in fish sauce, sugar, stock, and lime leaves, then stir-fry for another minute. Toss in noodles and nuts if desired, then heat through. Serve with coriander and lime.
