Spicy black bean veggie burgers with corn, jalapenos, and chili powder - perfect on its own or with all the fixings.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 teaspoon dried oregano
  • 0.5 red bell pepper, diced
  • 1 ear corn, kernels cut from cob
  • 1 (15 ounce) can black beans, drained and rinsed
  • 0.5 cup plain bread crumbs
  • 4 teaspoons chili powder
  • 1 tablespoon minced fresh cilantro
  • 0.5 teaspoon ground cumin
  • 0.5 cup all-purpose flour, or as needed
  • 1 tablespoon olive oil, or as needed
Instructions:
  • In a skillet over medium heat, sauté onion, garlic, jalapeno pepper, and oregano in 1 tablespoon of olive oil until onions are translucent, about 8-10 minutes. Add red bell pepper and corn to the mixture and cook until the red bell pepper is tender, approximately 2-4 more minutes.
  • In a large bowl, combine mashed black beans with vegetable mixture, bread crumbs, chili powder, cilantro, cumin, and salt. Shape the mixture into 4 patties and coat each patty with flour on both sides.
  • In a skillet over medium heat, sizzle patties in 1 tablespoon of olive oil until golden brown on both sides, about 5 to 8 minutes per side.
