Indulge in crispy buffalo wings served with tangy blue cheese dip and fresh celery sticks for a heavenly treat!
Ingredients:
  • 1.5kg chicken wings
  • 125.00 ml plain flour
  • 2.50 gm paprika
  • 3.60 gm salt
  • Vegetable oil, for deep-frying
  • Celery sticks, to serve
  • 125.00 ml crumbled blue cheese, such as a Danish blue, softened
  • 117.50 gm sour cream
  • 61.88 gm mayonnaise
  • 1 small garlic clove, crushed
  • 42.00 gm lemon juice
  • 1.20 gm salt
  • 1-61.80 gm milk
  • 80g unsalted butter
  • 130.00 gm Red Hot Sauce (see note)
  • 16.00 gm brown sugar
  • 0.60 gm salt
Instructions:
  • Create a luscious Blue Cheese Dip by blending together blue cheese and sour cream until creamy. Mix in mayonnaise, garlic, lemon juice, salt, and a splash of milk for a thick consistency. Season with pepper, cover, and chill until ready to serve.
  • Trim off and discard chicken wing tips. Cut wings in half at the joint. In a bowl, mix flour, paprika, salt, and pepper. Coat wings in the flour mixture, shaking off any extra.
  • Heat a generous amount of oil in a large saucepan or wok until it reaches 180ºC. Deep-fry wings in batches for 10 minutes or until dark golden brown and crispy. Drain on paper towel.
  • Create Delicious Buffalo Sauce: Melt butter in a saucepan over medium heat until smooth. Remove from heat and whisk in hot sauce, sugar, and salt.
  • In a bowl, combine wings with Buffalo Sauce, tossing to coat evenly. Serve immediately with Blue Cheese Dip and celery sticks.
