Buffalo haloumi wings recipe

Spicy buffalo haloumi wings with homemade blue cheese dip.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 5.00 gm smoked paprika
  • 5.00 gm ground paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 250ml (1 cup) buttermilk
  • 2 eggs, lightly whisked
  • 500g haloumi
  • Vegetable oil, to deep-fry
  • Sriracha or hot sauce, to serve (optional)
  • 65g (1/4 cup) sour cream
  • 65g (1/4 cup) mayonnaise
  • 60ml (1/4 cup) buttermilk
  • 75g soft blue cheese, crumbled
  • 20.00 ml finely chopped fresh chives
Instructions:
  • In a bowl, combine sour cream, mayonnaise, buttermilk, and lemon juice. Mix until smooth, then fold in blue cheese and chives. Chill in the fridge until ready to serve.
  • In a large shallow dish, combine flour, paprika, garlic powder, onion powder, allspice, cayenne, and salt. In a separate large shallow dish, pour the buttermilk. Whisk the eggs in a bowl.
  • Slice the haloumi in half horizontally, then cut each half into delicious wedges.
  • In batches, coat the haloumi in buttermilk, flour mixture, and egg. Ensure excess is shaken off and drained. Finally, toss in flour mixture until well-coated and transfer to a plate.
  • Pour enough oil into a medium non-stick frying pan to reach halfway up the side. Heat over medium-high heat.
  • Place 6 pieces of haloumi in the hot oil, ensuring they have space to cook evenly. Sear for 2 minutes or until golden brown, then transfer to a paper towel-lined tray using a slotted spoon. Repeat with the rest of the haloumi. Serve while hot with the blue cheese dipping sauce and optional chilli sauce on the side.
