Indulge in the tantalizing flavors of this tropical delight with every bite.
Ingredients:
  • 200g (1 cup) Basmati rice
  • 400g pork fillet, thinly sliced
  • 60ml (1/4 cup) Caribbean Marinade
  • 3 shallots, ends trimmed, cut into 3cm pieces
  • 1 bunch asparagus, woody ends trimmed, cut into thirds
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 30.00 ml finely grated fresh ginger
  • 1 x 225g can pineapple pieces in natural juice
  • 80g (1/2 cup) frozen peas
  • 125.00 ml fresh basil leaves
Instructions:
  • Prepare the rice according to the instructions on the packet until it is tender.
  • Combine the pork, garlic, and 1 tablespoon of marinade in a glass or ceramic bowl.
  • Heat oil in a hot wok. Cook half the pork until golden on both sides, about 1 minute per side. Transfer to a heatproof bowl. Repeat with the remaining pork, keeping the wok hot between batches.
  • Clean the wok or pan with a paper towel. Heat the rest of the oil in the wok over high heat. Add shallot, asparagus, and capsicum, then stir-fry for 3 minutes until the veggies are just tender.
  • Toss in the pork, ginger, pineapple with juice, peas, and the remaining marinade into the sizzling wok. Stir-fry for 2 minutes or until everything is warmed through.
  • Spoon the rice and pork mixture onto individual serving dishes. Garnish each dish with a sprinkle of fresh basil before serving.
