Air-fried spicy chicken jerky with zesty mojo criollo marinade and Cajun seasoning.
Ingredients:
  • 2 (5 ounce) boneless chicken breasts, cut into strips
  • 0.5 cup mojo criollo marinade (such as Goya®)
  • 2 teaspoons Cajun seasoning
  • 6 wooden skewers
Instructions:
  • Place the chicken strips, marinade, and Cajun seasoning in a resealable plastic bag. Chill in the fridge for 8 hours or overnight.
  • Cut skewers to fit perfectly on the air fryer basket, with a slight overlap, then trim off any extra length.
  • Heat up the air fryer to 180°F (80°C) for 10 minutes before cooking.
  • Skewer chicken strips with space in between each one as the air fryer heats up.
  • Air fry the skewers for 30 minutes, rearrange them, and continue air frying for another 30 minutes. Repeat this process one more time, for a total of 90 minutes, adjusting as necessary to fit the maximum air fryer setting of 30 minutes.
  • Crank up the heat to 200°F (95°C) and air fry for 15 more minutes.
  • Transfer the strips to a paper towel-lined container, seal it, and refrigerate overnight before serving.
