Spicy Chipotle Pork Grilled Tenderloin

Spicy adobo and chipotle chiles make these pork tenderloins irresistibly flavorful and juicy.
Ingredients:
  • 1/2 cup taco sauce
  • 3 tablespoons honey
  • 2 chipotle chiles in adobo sauce (from 7 or 11-oz. can), chopped
  • 2 teaspoons adobo sauce (from can of chipotle chiles)
  • 2 (3/4 to 1-lb.) pork tenderloins
  • 2 tablespoons olive oil
  • 1/4 teaspoon pepper
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Preheat gas or charcoal grill. In a small saucepan, mix taco sauce, honey, chiles, and adobo sauce. Brush pork tenderloins with oil and season with salt and pepper.
  • Once the grill is hot, place the pork on the grill over medium heat, about 4 to 6 inches from the coals. Cook for 13 to 15 minutes or until a thermometer reads 155°F when inserted in the center, flipping once and brushing with taco sauce mixture during the last 10 minutes of cooking. Allow the pork to rest for 10 minutes until the thermometer reaches 160°F.
  • Bring the remaining taco sauce mixture to a boil, slice the pork, sprinkle with cilantro, and serve the sauce with the pork.
