Pork Pot Stickers with Chipotle Honey Sauce

Try these savory pork pot stickers with spicy chipotle honey sauce for a quick and tasty Asian appetizer in just an hour!
Ingredients:
  • 1 cup honey
  • 4 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
  • 2 tablespoons adobo sauce (from can of chiles)
  • 4 medium dried black mushrooms
  • 1 lb lean ground pork
  • 1/3 cup finely chopped canned bamboo shoots
  • 4 medium green onions, finely chopped (1/4 cup)
  • 1 tablespoon dry white wine or nonalcoholic wine
  • 1 tablespoon water
  • 1 teaspoon cornstarch
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • Dash of white pepper
  • 2 cups all-purpose flour
  • 1 cup boiling water
  • 1/2 cup vegetable oil
  • 2 cups water
Instructions:
  • Combine all sauce ingredients in a small bowl and let it sit for later use.
  • In a small bowl, immerse mushrooms in hot water until soft, about 20 minutes. Drain, rinse with warm water, and squeeze out excess moisture. Discard stems, finely chop caps.
  • Combine mushrooms, pork, bamboo shoots, green onions, wine, 1 tablespoon water, cornstarch, salt, sesame oil, and white pepper in a large bowl.
  • 1. In a medium bowl, combine flour and 1 cup of boiling water to create a soft dough. 2. Knead the dough on a lightly floured surface for approximately 5 minutes until it is smooth. 3. Divide the dough in half and shape each half into a 12-inch-long roll. 4. Cut each roll into 24 slices, each about 1/2 inch thick.
  • On a lightly floured surface, roll out a slice of dough into a 3-inch circle. If the dough springs back, cover it with a towel and let it rest for about 10 minutes until it's easier to roll and maintains its shape. Place 1 tablespoon of pork mixture in the center of the circle. Pinch 5 pleats along one half of the circle, then fold it in half and press the pleated edge to the unpleated edge. Alternatively, fold the circle in half and press the edges with a fork. Arrange the dumpling on a cookie sheet with the pleated edge facing up. Gently press down to flatten the bottom. Repeat with the remaining dough slices.
  • Preheat the wok until extremely hot. Drizzle 2 tablespoons of vegetable oil and swirl to coat the sides. Arrange approximately 12 dumplings in a single layer in the wok. Cook for 2 minutes until the bottoms are golden brown. Pour in 1/2 cup of water, cover, and cook for 6 to 7 minutes until the water is absorbed. Repeat with the rest of the dumplings, adding more oil if needed. Serve with dipping sauce.
