Spicy chocolate heart-shaped cookies with a hint of cinnamon and cayenne, thin and crispy.
Ingredients:
  • 1 1/2 cups (195 g) all-purpose flour
  • 3/4 cup (70 g) natural, unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon Kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne
  • 8 tablespoons (1 stick, 110 g) unsalted butter, room temperature
  • 3/4 cup (150 g) sugar
  • 1 egg (size large)
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon molasses
Instructions:
  • Combine the flour, cocoa, baking soda, salt, cinnamon, and cayenne in a large bowl, whisking vigorously until well mixed.
  • Cream together butter and sugar in a stand mixer until fluffy, about two minutes on medium speed. Add the egg, vanilla, and molasses. Don't be concerned if the mixture appears slightly curdled.
  • Combine the dry ingredients with the wet ingredients in thirds, beating well after each addition. Once blended, shape the dough into a ball by hand until it resembles Play-Doh. If too stiff, gradually mix in a tablespoon of water until it reaches a pliable consistency. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  • Prepare to roll out the dough by preheating the oven to 350°F (175°C). Take a quarter of the dough ball and place it between two sheets of parchment paper. Roll out the dough evenly to 1/8-inch thickness using a rolling pin.
  • Cut out shapes: Use a cookie cutter or the rim of a small glass to cut cookie shapes from the rolled out dough. Arrange on a parchment paper or silicone-lined baking sheet, leaving at least 1/2 inch of space between each cookie. If making different sizes, bake each size separately to ensure even cooking.
  • Bake on the middle rack at 350°F (175°C) for 8 to 10 minutes, adjusting as needed based on cookie size and thickness. Test a few cookies for desired texture - they should be slightly dark at the edges and crispy when cooled, without burning.
  • Allow the cookies to cool in the tray for 5 minutes, then transfer them to a rack to cool completely.
