Creamy cod and vegetable casserole with cheesy mashed potato topping.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium carrot, chopped
  • 1 cup heavy cream or single cream
  • 3 pounds potatoes, peeled and chopped
  • 1 (8 ounce) package Cheddar cheese, shredded
  • 0.25 cup chopped fresh parsley
  • 2 (6 ounce) fillets cod or other white fish fillets, cut into 1-inch pieces
  • 0.25 teaspoon hot chili powder
  • 3 tablespoons milk
  • 1 tablespoon butter
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and lightly grease a 9x13 inch baking dish.
  • Place potatoes in a pot and cover with water. Boil until tender, approximately 10 minutes. Drain and mash with milk and butter until smooth.
  • In a large skillet over medium heat, warm the oil. Sauté onion and carrots until slightly softened. Season with salt, pepper, and chili powder. Add cream and parsley, then take off the heat.
  • Lay the fish evenly in the prepared baking dish. Drizzle the cream and vegetable mixture over the fish, then top with mashed potatoes and a sprinkle of shredded cheese.
  • Bake in a preheated oven for 40 minutes, or until piping hot all the way through.
