Spicy serrano chiles heat up these sticky-sweet wings, garnished with toasted sesame seeds for added flavor.
Ingredients:
  • 3 pounds chicken wings
  • 2 eggs, beaten
  • 1 cup all-purpose flour
  • 1 cup margarine
  • 0.5 cup apple cider vinegar
  • 3 tablespoons soy sauce
  • 3 tablespoons water
  • 1 cup brown sugar
  • 1 teaspoon monosodium glutamate (MSG)
  • 0.5 teaspoon salt
  • 3 serrano chile peppers, minced
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons sesame seeds, toasted
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Pat the chicken wings dry with a paper towel.
  • In one bowl, whisk the eggs, and in another bowl, place the flour. Dip the chicken wings first into the egg, then into the flour to coat lightly, shaking off any excess.
  • Heat the margarine in a large skillet over medium-high heat until fully melted.
  • Sear the chicken wings until golden brown all over, approximately 10 minutes.
  • Simmer the cider vinegar, soy sauce, water, brown sugar, monosodium glutamate, salt, serrano chile peppers, and ginger in a saucepan over medium heat until it thickens, about 5 to 7 minutes.
  • Coat the browned chicken wings in the sauce, then transfer them to a large baking dish using a slotted spoon. Save any extra sauce for later.
  • Roast the chicken in the preheated oven for 30 minutes, basting with the reserved sauce halfway through.
  • Before presenting, generously scatter sesame seeds over the chicken wings for an added touch of flavor and crunch.
