Succulent Korean chicken thighs: Spicy, sweet, marinated in sesame oil, soy sauce, ginger, garlic, and Korean chile paste.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1.5 tablespoons Korean chile paste (gochujang)
  • 1 tablespoon sesame oil
  • 1 teaspoon Korean red chile flakes (gochugaru)
  • 3 cloves garlic, minced
  • 1 (1 inch) piece ginger, peeled and minced
  • 1 pound skinless, boneless chicken thighs, pounded if desired
Instructions:
  • In a large bowl, whisk together soy sauce, vegetable oil, chile paste, sesame oil, chile flakes, garlic, and ginger until the chile paste is fully dissolved. Add the chicken and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Grill the chicken until it's beautifully charred and cooked through, about 5 to 8 minutes per side, reaching an internal temperature of 165°F (74°C) when tested with a thermometer.
