Korean ribs marinated in spicy kochujang, pilsner lager, and ginger, then baked and grilled for bold, delicious flavors.
Ingredients:
  • 4 racks baby back pork ribs
  • 1 small onion, sliced
  • 1 cup kochujang (Korean hot sauce)
  • 0.25 cup white vinegar
  • 0.25 cup minced garlic
  • 3 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 (1 1/2 inch) piece fresh ginger root, minced, or to taste
  • 1 (1 1/2 inch) piece fresh ginger root, sliced, or to taste
  • 1 (12 fluid ounce) bottle pilsner-style lager
  • 1.5 teaspoons toasted white sesame seeds
  • 1.5 teaspoons toasted black sesame seeds
Instructions:
  • Prepare the ribs by removing the membrane from the back or scoring with a sharp knife. Place the ribs in a shallow dish and generously season with salt and pepper.
  • Blend onion until smooth in a food processor, then add kochujang, vinegar, garlic, sesame oil, soy sauce, and minced ginger to create a flavorful sauce. Blend until smooth.
  • Massage one-third of the delectable sauce lovingly onto the ribs, ensuring each inch is covered in flavor. Set aside the remaining sauce for a tantalizing finishing touch. Wrap the ribs with plastic wrap and let them chill in the refrigerator for 5 hours to overnight, allowing the flavors to meld and intensify.
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Layer the sliced ginger root at the bottom of a roasting pan. Arrange the ribs meat-side down on top of the ginger slices and generously pour lager over them. Cover the pan with a lid or aluminum foil.
  • Roast in the preheated oven until the meat easily comes off the ribs but is still tender, about 2 to 2 1/2 hours. Allow to cool for 5 to 10 minutes before serving.
  • Heat up your grill to 400 degrees F (200 degrees C) and lightly grease the grate.
  • Grill ribs until golden brown on each side, approximately 6 minutes. Brush with half of the reserved sauce in the final 2 minutes of grilling. Sprinkle with a mix of white and black sesame seeds before serving.
