Spicy lamb in lettuce cups

Try lamb mince lettuce cups for a unique spin on san choy bau. Quick and simple for a delicious mid-week meal.
Ingredients:
  • 1 iceberg lettuce
  • 1 large brown onion, finely chopped
  • 87.50 gm red curry paste
  • 1kg lean lamb mince
  • 250.00 ml thick Greek-style yoghurt, to serve
Instructions:
  • Cut the lettuce in half lengthwise and soak both halves in a large bowl of cold water for 30 minutes to make separating the leaves easier. Drain well and separate all the leaves.
  • In a non-stick pan over medium heat, sauté onions until tender. Stir in curry paste and cook for 1 minute. Add the ground meat and brown while breaking it up with a wooden spoon for 4 to 5 minutes. Season with salt and pepper to taste.
  • Arrange lettuce leaves on serving plates or bowls, selecting leaves that can hold the filling. Fill lettuce cups with the mixture and enjoy with a side of yogurt.
