Spicy Noodles - Malay Style

Spicy Malay noodle stir-fry with spinach, peas, bean sprouts, and scrambled eggs - devilishly delicious!
Ingredients:
  • 1 (12 ounce) package uncooked egg noodles
  • 3 tablespoons olive oil
  • 1 teaspoon finely chopped garlic
  • 0.5 bunch fresh spinach, stems removed, chopped
  • 0.25 cup chile paste
  • 3 tablespoons ketchup
  • 1 egg
  • 0.5 teaspoon white sugar
  • 0.25 cup water
  • salt and pepper to taste
  • 0.5 cup fresh bean sprouts
  • 0.5 cup green peas
Instructions:
  • Bring a pot of water to a rolling boil. Cook the egg noodles for 6 to 8 minutes until al dente, then drain them.
  • In a skillet over medium heat, sizzle the garlic in oil for about a minute. Add spinach and saute for another minute. Add cooked egg noodles, chile paste, and ketchup, and toss until everything is well coated.
  • Create a well in the middle of the noodles. Crack an egg into the well and gently scramble it with the noodles until the egg is cooked to perfection.
  • Combine the sugar with water in the skillet until the mixture is moist. Season with salt and pepper. Stir constantly and cook for approximately 6 minutes. Add in the sprouts and peas and cook for about 4 minutes until heated through.
