Spicy Noodles and Cabbage Stir-Fry

Spicy Asian noodles and cabbage stir-fry ready in 40 minutes - a quick and delicious skillet meal!
Ingredients:
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce*
  • 1 tablespoon rice vinegar or white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon sesame oil
  • 8 oz uncooked fettuccine
  • 2 cloves garlic, finely chopped
  • 1 tablespoon finely chopped gingerroot
  • 1 small onion, cut into 1/2-inch wedges
  • 2 medium carrots, shredded (1 cup)
  • 3 cups chopped Chinese (napa) cabbage
  • 1 medium green onion, thinly sliced (1 tablespoon)
  • 2 tablespoons chopped dry-roasted peanuts
Instructions:
  • Combine all sauce ingredients in a small bowl and mix until fully incorporated; set aside.
  • Prepare the fettuccine according to package instructions, then rinse it in warm water.
  • In a nonstick wok or 12-inch skillet, heat vegetable oil over medium-high heat. Stir in garlic, gingerroot, onion, and carrots; stir-fry for 2 minutes. Add cabbage and stir-fry for 2 to 3 minutes until crisp-tender.
  • Combine the sauce and fettuccine with the cabbage mixture and stir-fry for approximately 2 minutes until heated through. Transfer to a serving platter and sprinkle with chopped green onion and peanuts for garnish.
