Spicy paprika potato wedges

Spice up potato wedges for a flavor explosion!
Ingredients:
  • 6 pontiac potatoes, cut into wedges
  • 5.00 gm smoked paprika
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 4 mild pancetta slices
  • 250ml dressing
  • 62.50 ml finely chopped chives
  • 250.00 ml flat-leaf parsley leaves, finely shredded
  • 1 lemon, rind finely grated
Instructions:
  • Preheat your oven to 200C. Line a large baking tray with non-stick baking paper. In a big bowl, mix the potatoes with oil, paprika, cumin, and coriander. Season generously with salt and pepper. Gently toss everything together. Spread the mixture evenly on the lined tray. Bake for 40 minutes, flipping occasionally, until crispy and golden brown.
  • Lay the pancetta slices on a baking tray and bake until crispy, about 10 minutes. Take out of the oven and tear into large pieces.
  • Mix the ranch dressing and chives in a small bowl.
  • In a large serving bowl, artfully combine the potato wedges and pancetta. Drizzle with dressing, scatter fresh parsley on top, and finish with a sprinkle of lemon zest. Serve immediately for the best flavors.
