Persimmon chutney: a tangy, sweet twist on cranberry sauce, perfect for your festive table.
Ingredients:
  • 1.5 cups cider vinegar
  • 1 cup chopped onion
  • 1 large Granny Smith apple - peeled, cored and chopped
  • 1 cup golden raisins
  • 0.75 cup white sugar
  • 0.25 cup lemon juice
  • 1 green chile pepper, seeded and minced
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon lemon zest
  • 1 teaspoon ground coriander seed
  • 0.125 teaspoon ground cloves
  • 4 Fuyu persimmons, peeled and chopped
Instructions:
  • In a large saucepan, delectably mix cider vinegar, onion, apple, raisins, sugar, lemon juice, green chile, ginger, lemon zest, coriander, and cloves. Let the aromatic symphony come to life over medium heat, giving it a gentle stir from time to time. Lower the heat to medium-low and let it simmer gracefully until it thickens, ensuring to stir it frequently for about 25 minutes. Introduce the persimmons to the divine concoction and let it simmer until the persimmons reach their tender perfection, about 5 to 10 minutes more.
  • Allow the mixture to cool off completely, then cover and refrigerate.
