Flautas got their name from their flute-like shape.
Ingredients:
  • 75.90 gm vegetable oil
  • 500g pork scotch fillet, thinly sliced
  • 1 red onion, finely chopped
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 2.50 gm smoked paprika
  • 1.25 gm ground cumin
  • 1/2 tsp dried oregano
  • 400g can diced tomatoes
  • 5.20 gm Tabasco sauce or hot sauce
  • 8 flour tortillas
  • 165.00 ml cheddar, grated
  • 1 avocado
  • 21.00 gm lime juice
  • 250g cherry tomatoes, quartered
  • 40.00 ml fresh coriander leaves
  • 82.50 ml cheddar, grated, extra
Instructions:
  • In a large frying pan over medium-high heat, warm 1 tablespoon of oil. Add the pork and cook for 2 to 3 minutes until browned while stirring. Transfer the pork to a bowl and cover to keep warm.
  • Sauté onion and capsicum until softened, about 5 minutes. Stir in garlic, spices, and oregano, and cook until fragrant, about 1 minute. Add tomatoes and Tabasco sauce, bring to a boil, then simmer for 5 minutes.
  • Place the pork back in the pan. Lower the heat and simmer for 5 minutes until the sauce slightly thickens and the pork is fully cooked. Then spoon 1/2 cup of the pork mixture along the center of each tortilla. Sprinkle 1 tablespoon of cheese over the pork. Roll up the tortillas to trap the filling inside.
  • Using a paper towel, gently wipe the pan clean. Heat the rest of the oil in the pan over medium-high heat. Cook the flautas in batches with the seam side down for 1 to 2 minutes on each side until they are golden and crispy.
  • While waiting, gently place the avocado in a small bowl and lightly crush it. Mix in the lime juice and season with salt and pepper. Serve the flautas alongside tomato, cilantro, extra cheese, and the avocado mixture.
