Spicy potato wedges with sour cream

Ingredients:
  • 10.00 gm ground cumin
  • 20.00 ml ground coriander
  • 10.00 gm paprika
  • 1/2 tsp chilli powder
  • 56.88 gm light olive oil
  • 1kg medium potatoes, scrubbed
  • Sea salt
  • 2 shallots, finely chopped
  • 20.00 ml chopped coriander
  • Sour cream, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Preheat the oven to 200°C. Line the base of a large baking dish with non-stick baking paper. In a large bowl, mix spices with oil thoroughly.
  • Cut the potatoes into 6 wedges each, then toss them in a bowl with the spices until evenly coated.
  • Place the potato wedges in a large baking dish in a single layer. Sprinkle them liberally with sea salt. Bake for 45 minutes until they are tender and crispy. Transfer the cooked wedges to a large serving bowl.
  • Sprinkle the mixture of shallots and coriander on top and serve with a dollop of sour cream and sweet chilli sauce.
