Elevate your pasta dish with nutrient-rich spelt pasta for extra fiber and protein.
Ingredients:
  • 200g spelt spaghetti
  • 18.20 gm extra virgin olive oil
  • 300g peeled green prawns, tails intact
  • 4 garlic cloves, thinly sliced
  • Finely grated rind of 1 lemon
  • 2 long fresh red chillies, deseeded, thinly sliced
  • 2 bunches broccolini, trimmed, cut into 4cm lengths
  • 1 zucchini, halved, thinly sliced
  • 250g cherry tomatoes, halved
  • 21.00 gm fresh lemon juice
  • 125.00 ml small fresh basil leaves
  • 40g feta, crumbled
Instructions:
  • In a large saucepan of boiling salted water, cook the spaghetti according to package instructions until al dente, then drain and return to the pan.
  • Heat 1 teaspoon of oil in a large frying pan over high heat. Cook prawns for 3-4 minutes until golden, stirring occasionally. Transfer to a plate and set aside.
  • In a hot frying pan, sizzle 1 teaspoon of oil. Toss in garlic, lemon rind, and chili, cook while stirring for 1 minute until fragrant. Introduce broccolini and zucchini along with 2 tablespoons of water. Cover and cook for 1 minute until veggies are nearly tender. Finally, add prawns and tomato, cook for 2 more minutes until tomatoes start to soften.
  • Combine the spaghetti, lemon juice, basil, and remaining 2 teaspoons of olive oil with the prawn mixture over medium heat for 1-2 minutes until well mixed. Finish by sprinkling with feta.
