Spicy prawn rice perfect for summer nights, made with just 6 simple ingredients.
Ingredients:
  • 300.00 gm jasmine rice
  • 40.00 ml sambal oelek (see note)
  • 350g medium peeled green prawns, deveined (tails intact)
  • 36.40 gm peanut oil
  • 3 green onions, thinly sliced
  • 250g mini roma tomatoes, halved lengthways
  • 250.00 ml fresh coriander leaves, roughly chopped
Instructions:
  • Prepare rice according to package instructions. Drain and rinse thoroughly. Spread the rice on a tray and refrigerate until chilled, about 2 hours.
  • In a medium bowl, mix sambal oelek with prawns, ensuring they are evenly coated. Let marinate for 10 minutes.
  • 1. Preheat a wok over high heat and add oil, swirling to coat. 2. Add prawns and sambal oelek mixture, stir-fry for 2 to 3 minutes until prawns are pink and cooked through. 3. Toss in onions and stir-fry for 1 minute. 4. Add rice and tomatoes, stir-fry for 2 minutes or until rice is heated through. 5. Sprinkle in coriander, toss to combine, and serve.
