"Effortless BBQ chicken and prawn fried rice using microwave rice and pantry staples."
Ingredients:
  • 450g packet microwave jasmine rice
  • 1/2 barbecued chicken
  • 27.30 gm peanut oil
  • 250g peeled green prawns
  • 1 red capsicum, deseeded, cut into strips
  • 100g snow peas, halved diagonally
  • 3 green shallots, sliced diagonally
  • 42.00 gm soy sauce
  • 2 tsp sesame oil
  • Sriracha sauce, to taste (optional)
Instructions:
  • Cook the rice according to the instructions on the packet. Shred the meat from the barbecued chicken.
  • In a large wok or deep frying pan, heat 2 tsp of oil over high heat. Add prawns and cook for 2 minutes, stirring until they change color. Transfer to a plate.
  • Lower the heat to medium-high and drizzle 2 tsp of oil into the pan. Sauté the capsicum, snow peas, and shallot, stirring occasionally, for 3 minutes or until just tender. Transfer the vegetables to a plate along with the prawns.
  • Heat the remaining oil in the pan, then add the rice and cook for 2 minutes while stirring. Return the prawns and vegetables to the pan, add chicken, soy sauce, and sesame oil. Toss everything together and heat through. To serve, drizzle with sriracha sauce if desired.
