Spiced pumpkin scones - perfect for cozy fall mornings.
Ingredients:
  • 0.5 cup white sugar, divided
  • 1 teaspoon ground cinnamon
  • 5 tablespoons butter, divided
  • 1 large egg
  • 0.5 cup pumpkin puree
  • 0.25 cup sour cream
  • 0.5 teaspoon ground ginger
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • In a large bowl, whisk together flour, 7 tablespoons of sugar, baking powder, cinnamon, baking soda, and salt. Add 4 tablespoons of butter and use a pastry cutter to blend until mixture is crumbly.
  • Whisk the egg in a bowl until smooth, then add pumpkin, sour cream, and ginger. Beat until fully combined. Fold the pumpkin mixture into the flour until a soft dough forms.
  • Transfer the dough to a generously floured surface and knead gently 10 times. Shape the dough into a 9x6-inch rectangle. Cut the dough into 6 squares, then slice each square in half diagonally to create 12 triangles.
  • Space out the dough triangles by 2 inches on an ungreased baking sheet. Brush melted butter over the scones and then sprinkle with sugar.
  • Bake in the oven until scones are golden brown and a toothpick comes out clean, about 10-12 minutes.
