Spicy red capsicum hummus recipe

10-minute vegetarian dip, perfect for quick afterschool snacks or impromptu weekend visits.
Ingredients:
  • 400g can chickpeas, rinsed, drained
  • 42.00 gm fresh lemon juice
  • 36.40 gm olive oil
  • 1 long fresh red chilli, chopped
  • 1 garlic clove, crushed
  • 260g jar chargrilled red capsicum, drained
  • Toasted pine nuts, to sprinkle
Instructions:
  • Combine chickpeas, lemon juice, oil, chili, garlic, and capsicum in a food processor and pulse until smooth. Season to taste, then transfer the mixture to a serving bowl. Sprinkle with pine nuts before serving.
