Vibrant roasted tomatillo salsa - perfect for dipping or topping!
Ingredients:
  • cooking spray
  • 8 fresh tomatillos, husks removed
  • 1 serrano pepper
  • 1 jalapeno pepper
  • 0.5 medium yellow onion, quartered
  • 3 cloves garlic, unpeeled
  • 0.5 cup cilantro leaves
  • 1 lime, juiced
  • 1 tablespoon kosher salt
  • 0.5 tablespoon freshly ground black pepper
  • 1 cup water
Instructions:
  • Position oven rack 6 inches below broiler element and preheat broiler on high. Grease a baking sheet with fat-free cooking spray.
  • Halve the tomatillos and place them cut-side-down on the baking sheet alongside the serrano pepper, jalapeno pepper, onion, and garlic.
  • Char skillfully under the broiler in the preheated oven for about 20 minutes, ensuring even charring by flipping the peppers halfway through.
  • Take the vegetables out of the oven and allow them to cool completely for around 15 minutes. Then, remove the stems from the peppers and peel the garlic.
  • In a food processor, blend tomatillos, serrano pepper, jalapeno pepper, onion, garlic, cilantro, lime juice, and salt until reaching the desired consistency. Chill in a sealed container in the fridge for a minimum of 30 minutes to enhance flavors.
