Ingredients:
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 cup quick-cooking grits
  • 2 tablespoons margarine
  • 1 bunch green onions, chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 pound peeled and deveined small shrimp
  • 1 cup shredded Monterey Jack cheese
  • 0.75 cup shredded sharp Cheddar cheese
  • 1 (10 ounce) can diced tomatoes and green chilies
  • 0.5 teaspoon black pepper
  • 0.25 cup shredded sharp Cheddar cheese
Instructions:
  • First, preheat the oven to 350 degrees F (175 degrees C) to create the perfect baking environment. Then, generously grease a 9x12 inch baking dish to ensure easy serving and cleaning later on.
  • In a large saucepan over high heat, bring the chicken broth and salt to a boil. Stir in the grits and return to a simmer. Reduce heat to medium-low and cook for 20 minutes, stirring frequently.
  • In a skillet over medium heat, melt the margarine until sizzling. Add green onions, green pepper, and garlic; sauté until peppers are tender, for about 5 minutes. Add shrimp and cook until just firm.
  • Combine the Monterey Jack cheese, 3/4 cup Cheddar cheese, shrimp and vegetables, canned tomatoes, and black pepper into the grits. Transfer the mixture into a baking dish and top with the remaining 1/4 cup of Cheddar cheese before baking.
  • Bake until the cheese is bubbly and starts to brown, for 30-45 minutes in the preheated oven.
