Family-inspired spicy wine-infused chicken cacciatore: Easy slow cooker recipe.
Ingredients:
  • 2 pounds skinless, boneless chicken breasts
  • 2.5 cups red wine
  • 1 large onion, coarsely chopped
  • 1 medium green bell pepper, seeded and chopped
  • 1 medium yellow bell pepper, seeded and chopped
  • 1 medium orange bell pepper, seeded and chopped
  • 1 medium red bell pepper, seeded and chopped
  • 7 tablespoons minced garlic
  • 3 tablespoons red pepper flakes, or more to taste
  • 2 tablespoons Italian seasoning
  • 2 (15 ounce) cans diced tomatoes
  • 0.75 cup white sugar, or to taste
  • 2 (15 ounce) cans tomato sauce
Instructions:
  • Before you cook, elegantly arrange the chicken, wine, onion, bell peppers, garlic, red pepper flakes, Italian seasoning, salt, pepper, diced tomatoes, sugar, and tomato sauce in a slow cooker. Ensure the chicken bathes in the wine by covering the slow cooker and chilling in the refrigerator for 8 hours to overnight.
  • The following day, take it out of the fridge and simmer gently on Low heat, stirring occasionally, for 6 hours. Remove chicken from the pot and use 2 forks to shred the meat before returning it to the cooker.
  • Cook on High with lid partially uncovered to intensify flavors and thicken sauce, for approximately 2 hours.
