Spicy deviled eggs with a fiery twist.
Ingredients:
  • 12 eggs
  • 1 tablespoon salt
  • 1/2 cup reduced-fat mayonnaise
  • 1 tablespoon Dijon mustard
  • 3 tablespoons chopped green onions
  • 2 tablespoons Sriracha sauce
  • Chopped fresh cilantro, if desired
Instructions:
  • Place eggs in a 4-quart saucepan in a single layer and cover them with cold water at least 1 inch above the eggs. Add salt and heat over medium heat until boiling, then let it boil for 30 seconds. Cover the saucepan, remove from heat, and let it stand covered for 12 minutes.
  • After draining and rinsing the eggs, immerse them in a bowl of ice water for about 5 minutes until they are completely cooled.
  • Peel the eggs and slice them in half lengthwise. Gently remove the yolks and place them in a medium bowl. Set the egg whites aside.
  • Combine mayonnaise, mustard, and half of the scallions with the yolks until smooth using a whisk.
  • Stuff egg whites generously with the yolk mixture. Drizzle with flavorful Sriracha sauce and garnish with the remaining scallions and fresh cilantro. Serve right away or chill for up to 24 hours before enjoying.
