Spicy Stir-Fried Udon Noodles

Succulent marinated pork, vibrant veggies, and bold Asian flavors stir-fried with udon noodles for a delectable dish surpassing takeout.
Ingredients:
  • 0.5 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1.5 tablespoons Sriracha sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon garlic powder
  • 3 boneless pork loin chops, cut into bite-sized pieces
  • 2 (7 ounce) packages fresh udon noodles
  • 2 cups chopped broccoli florets
  • 1 tablespoon olive oil, or more as needed
  • 0.5 onion, finely chopped
  • 4 cloves garlic, finely chopped, or more to taste
  • 3 tablespoons bean sprouts, or to taste
  • 3 tablespoons julienned carrot, or to taste
  • 2 tablespoons diced green onion, or to taste
Instructions:
  • Combine soy sauce, oyster sauce, hoisin sauce, brown sugar, Sriracha, rice vinegar, sesame oil, garlic powder, and pepper in a small bowl. Toss pork with half of the marinade in a bowl. Refrigerate for 4 hours to overnight. Save the rest of the marinade for the noodles.
  • 1. Bring a generously salted pot of water to a vigorous boil. Add udon and cook for 2 minutes. Introduce broccoli to the pot to blanch for a short moment, then cook until the noodles loosen, about 1 more minute. Strain and set aside.
  • In a wok or deep pan over medium heat, heat olive oil. Stir in onion and garlic, cook until translucent, around 5 minutes. Add pork, bean sprouts, and carrot, stir-fry until pork is cooked through, about 5 minutes. Mix in drained udon noodles and broccoli. Pour in the rest of the marinade and coat noodles evenly, 2 to 3 minutes. Sprinkle green onion on top and gently toss for 1 to 2 minutes.
