Ingredients:
  • 35g parmesan
  • 1/2 tsp chilli powder
  • 1/4 tsp cayenne pepper
  • 6 small flour tortillas
  • 30g butter, melted
  • 1 small vine-ripened tomato, diced, to serve
  • Guacamole dip, to serve
  • Chopped fresh coriander, to serve
Instructions:
  • Preheat your oven to 180°C and prepare two baking trays with non-stick baking paper.
  • Mix parmesan cheese with chili powder and cayenne pepper in a small bowl.
  • Stack the tortillas and cut into 8 wedges, then arrange in a single layer on the trays. Brush with butter and sprinkle with the parmesan mixture.
  • Bake until crispy, about 7-10 minutes. Let cool on a wire rack. Serve with guacamole dip combined with diced tomato and fresh coriander.
