Spicy-sweet nuts

Impress your holiday guests with Curtis Stone's irresistible spicy-sweet nuts as the perfect take-home treat!
Ingredients:
  • 375.00 ml raw cashews
  • 375.00 ml raw pecans
  • 250.00 ml raw whole almonds
  • 40.00 gm plus 2 tsp raw sugar
  • 2 tsp fleur de sel
  • 1/2 tsp cayenne pepper
  • 0.30 gm smoked paprika
  • 28.60 gm honey
  • 27.80 gm molasses
  • 2 tsp coarsely chopped fresh rosemary leaves
  • 1/2 tsp grated orange rind
Instructions:
  • Preheat the oven to a toasty 175°C (150°C).
  • Spread the cashews, pecans, and almonds evenly on a large baking tray. Roast for 8 minutes until the nuts are heated through.
  • In a large bowl, combine 2 tablespoons of raw sugar, 1 1/2 teaspoons of fleur de sel, cayenne, and paprika until well blended.
  • Add the nuts to the sugar-spice mixture in the large bowl, along with the honey, molasses, rosemary, and orange. Stir well to coat the nuts evenly.
  • Prepare the baking tray with nonstick foil and spread the nut mixture in an even layer. Sprinkle 2 teaspoons of raw sugar and 1/2 teaspoon of fleur de sel over the nuts. Roast for approximately 15 minutes until toasted. Allow to cool slightly and separate the nuts, or leave them in clusters as preferred.
  • Allow the nuts to cool completely to let the coating harden before serving.
