Spinach, Feta, and Pine Nut Ravioli Filling

"Stuff your fresh pasta with zesty filling."
Ingredients:
  • 1 tablespoon olive oil
  • 1 (10 ounce) bag fresh spinach
  • 1 cup feta cheese
  • 0.5 cup pine nuts
  • 2 fresh pasta sheets
  • 1 tablespoon water
Instructions:
  • In a large skillet over medium-high heat, warm the olive oil. Cook spinach until completely wilted, approximately 2 minutes. Allow it to cool slightly, then gently squeeze out excess liquid from the spinach.
  • In a blender or food processor, blend the cooked spinach, feta, and pine nuts until they form a smooth paste. In a small bowl, whisk together the egg and water.
  • Brush egg over one pasta sheet. Spoon filling by teaspoonfuls one inch apart. Top with another pasta sheet, push out air around filling, shape and cut. Seal edges with a fork.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Add the ravioli and gently stir. Cook uncovered until the ravioli float to the top and the filling is hot, about 3 to 5 minutes.
