Spinach, tomato, and feta cheese filled egg white omelette - a delicious and satisfying breakfast option.
Ingredients:
  • cooking spray
  • 3 egg whites
  • salt and ground black pepper to taste
  • 0.25 cup chopped fresh spinach, or more to taste
  • 6 cherry tomatoes, sliced
  • 2 tablespoons crumbled feta cheese
Instructions:
  • Preheat a skillet over medium heat and coat with cooking spray.
  • Beat egg whites with a pinch of salt and pepper until frothy. Pour into a heated skillet, swirling to coat the bottom evenly. Cook for 1 to 2 minutes. Place spinach, tomatoes, and feta cheese in the center of the eggs. Cook until edges start to curl, for 2 to 3 more minutes. Gently fold omelet in half with a spatula and continue cooking until cheese melts, for 2 to 3 more minutes.
