Delicious Spinach and Artichoke Sheet Pan Pizza - simple, quick, and perfect for feeding a group. Just dough, artichokes, spinach, and cheese. Ideal for busy nights!
Ingredients:
  • 3 tablespoons olive oil, divided
  • 1 pound pizza dough (store-bought or homemade )
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, chopped
  • 1 (6-ounce) bag baby spinach
  • 1 (12- to 14-ounce) jar marinated artichoke hearts, drained thoroughly (and sliced if needed; see Recipe Note)
  • 1 1/2 cups (6 ounces) shredded mozzarella cheese
  • Crushed red pepper flakes (optional)
Instructions:
  • Preheat the oven to 450ºF. Place the oven rack in the lower half and generously grease a 13x18-inch baking sheet with 1 tablespoon of olive oil.
  • Prepare the dough: Allow refrigerated pizza dough to rest at room temperature for 20 minutes. Dust a pastry board with flour and roll out the dough into a large rectangle with a rolling pin.
  • Spread and shape the dough in the oiled pan, ensuring it reaches the edges. If it resists, allow it to rest briefly before trying again. Drizzle 1 tablespoon of olive oil over the dough, then evenly distribute it using a brush or your fingers. Sprinkle Italian seasoning all over the dough.
  • In a large skillet over medium heat, sizzle the garlic in the remaining tablespoon of oil until fragrant. Add the spinach and sauté until wilted, about 2 minutes. Turn off the heat.
  • Finish the pizza: Stretch the dough to cover the pan completely. Layer half of the mozzarella on top, then add the sautéed spinach and artichokes. Finish with the remaining mozzarella sprinkled over the top.
  • Bake the pizza until the cheese is golden brown and bubbly, for 12-15 minutes.
  • To serve the pizza, elegantly transfer it onto a large cutting board using two spatulas to slice into squares. Alternatively, slice the pizza directly in the pan using a pizza wheel for a convenient option. Enjoy the piping hot pizza, optionally sprinkled with crushed red pepper flakes.
