Greek-inspired spinach and feta pie with sesame - a simple and flavorful twist on a classic!
Instructions:
  • Preheat the oven to 220°C/425°F/gas 7. Defrost the spinach and squeeze out excess liquid. In a bowl, mix flour, sea salt, and gradually add 325ml of water, stirring with a fork. Knead with flour-dusted hands until smooth, then let it rest on an oiled surface. Chop dill and spinach, crumble feta, and mix with pepper. Stretch the dough to 40cm x 60cm on the oiled surface. Transfer half to a 30cm x 40cm oiled tray with the rest hanging over. Spread spinach mixture on dough in tray, fold over, press edges to seal. Brush with olive oil, sprinkle sesame seeds, press into dough. Bake on bottom oven shelf for 25 minutes until golden. Serve hot, at room temp, or cold. Enjoy!
