Ingredients:
  • 1 medium brown onion, finely chopped
  • 2.50 gm smoked paprika
  • 1/4 tsp chilli powder
  • 100g baby spinach leaves
  • 200g feta, crumbled (see note).
  • 8 sheets of filo pastry
  • 30g butter, melted
  • tomato salad, to serve
Instructions:
  • In a large frying pan, warm up the olive oil over medium heat.
  • Sauté onion with paprika and chili powder in a pan for 5 minutes until onion is soft. Add baby spinach and cook for 3 more minutes until wilted.
  • Transfer the mixture to a bowl. Gently fold in the crumbled feta cheese and sprinkle with a pinch of freshly ground black pepper. Allow the filling to cool before using it in the assembly process.
  • Preheat the oven to 200°C. Line a baking tray with parchment paper. Cut the filo pastry in half crossways to create 16 half-sheets. Brush one half-sheet of pastry with melted butter. Place another pastry half on top and brush with butter. Continue layering to create a stack with 4 layers.
  • Continue layering the remaining pastry sheets with butter to create three additional stacks. Spread one-quarter of the spinach mixture along the short end of one stack.
  • Wrap the pastry around the filling and brush with butter. Transfer to a baking tray. Repeat to make 3 more rolls. Bake for 10-15 minutes until golden and crisp. Serve warm with a side of tomato salad.
