Spinach and Marinated Tomato Pizza

Elevate spinach pizza with tangy marinated grape tomatoes and creamy fresh mozzarella pearls.
Ingredients:
  • 1 cup grape tomatoes, halved
  • 1/4 cup reduced-fat balsamic vinaigrette
  • 1 box (9 oz) frozen chopped spinach
  • 1 package (10 oz) prebaked whole wheat pizza crust
  • 1/4 teaspoon black pepper
  • 3/4 cup fresh mozzarella pearls (5 oz)
  • 2 tablespoons thinly sliced fresh basil leaves
Instructions:
  • Preheat oven to 425°F. Toss grape tomatoes with vinaigrette in a medium bowl until evenly coated. Set aside.
  • Prepare the spinach according to the package instructions, then thoroughly squeeze to remove excess moisture.
  • Place the pizza crust on an ungreased cookie sheet. Spread spinach evenly over the crust and sprinkle with pepper. Use a slotted spoon to remove tomatoes from the vinaigrette and arrange them over the spinach. Finally, top everything evenly with mozzarella cheese.
  • Bake until the cheese is gooey and bubbling, then top with fresh basil.
