Spinach and three-cheese filo pie

Spinach and three creamy cheeses layered in crispy filo pastry.
Ingredients:
  • 2 bunches English spinach, trimmed and washed
  • 300g ricotta
  • 100g feta
  • 25g parmesan
  • 1 onion, roughly chopped
  • 3 eggs, lightly beaten
  • 40g pine nut
  • salt and cracked black pepper
  • 3 filo pastry sheets
Instructions:
  • Preheat the oven to 170C and lightly grease a baking dish. Quickly blanch the spinach in boiling water until wilted, then cool it under cold water. Squeeze out excess liquid using your hands and chop the spinach.
  • In a large bowl, combine spinach, ricotta, feta, parmesan, onion, eggs, pine nuts, salt, and pepper until fully mixed. Transfer the mixture to the baking dish.
  • Lay the filo sheets on a clean work surface, stacking them while spraying a touch of oil spray between each layer. Cut them into 10cm squares. Gently scrunch each square into a ball and place them on top of the spinach mixture in loose rows. Finish by giving them a light spritz of oil spray.
  • Bake until fully set and pastry is golden, about 35-40 minutes. Allow to stand for 5 minutes before serving.
