Vibrant baby spinach, fragrant basil, and juicy cherry tomatoes tossed in a zesty lemon and olive oil dressing - a refreshing and effortless salad.
Ingredients:
  • 250g cherry tomatoes
  • 100g baby spinach leaves
  • 1/2 bunch basil leaves
  • 21.00 gm lemon juice
  • 18.20 gm olive oil
  • 3 spring onions, finely sliced
Instructions:
  • For the Dressing: Combine basil leaves, lemon juice, and olive oil in a small food processor. Blend until the leaves are finely chopped and the mixture is nearly smooth. Season with salt and pepper to taste.
  • Halve or quarter the tomatoes based on their size, then toss them with fresh spinach leaves and sliced spring onions in a mixing bowl.
  • Drizzle half of the Dressing over the salad right before serving and toss to coat well. Serve the remaining dressing on the side.
