Lemon garlic prawns with linguine

Elevate pasta with a vibrant baby spinach and cherry tomato salad for a fresh and satisfying meal.
Ingredients:
  • 30g butter
  • 500g pkt linguine
  • 800g medium green prawns, peeled (tails intact), deveined
  • 2 cloves garlic, finely chopped
  • 125ml lemon juice
  • 3 tsp finely grated lemon rind
  • 20.00 ml lemon thyme leaves
  • 5.00 gm caster sugar
  • 100g baby spinach
Instructions:
  • Boil pasta in generously salted water until perfectly cooked. Drain well.
  • Heat butter and oil in a large frying pan over medium-high heat. Cook prawns and garlic, tossing, for 3-4 minutes until prawns are cooked through.
  • In a small bowl, combine lemon juice, lemon rind, lemon thyme, 2 tablespoons of oil, and sugar. Season with salt and pepper. Toss the prawns with the lemon dressing, drained pasta, and spinach until well combined. Serve promptly.
