Spinach Basil Pasta Salad

Refreshing spinach and basil pasta salad with Parmesan, pine nuts, and crispy prosciutto - a taste of summer in every bite.
Ingredients:
  • 1 (16 ounce) package bow tie pasta
  • 1 (6 ounce) package spinach leaves
  • 2 cups fresh basil leaves
  • 0.5 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 4 ounces prosciutto, diced
  • salt and ground black pepper to taste
  • 0.75 cup freshly grated Parmesan cheese
  • 0.5 cup toasted pine nuts
Instructions:
  • Fill a large pot with salted water and bring to a vigorous boil. Add bow tie pasta and cook until al dente, about 12 minutes. Drain the pasta in a colander and rinse with cold water to cool.
  • Combine the spinach and basil in a spacious bowl.
  • In a skillet set over medium heat, warm olive oil. Sauté garlic for 1 minute, then add prosciutto and cook for 2 to 3 more minutes. Take off the heat.
  • Combine the prosciutto mixture with spinach and basil, tossing to mix well. Add the drained pasta and toss once more. Season with salt and pepper, then top with Parmesan cheese and pine nuts before serving.
