Indulgent cheesy spinach and pancetta potatoes, perfect for brunch or as a side.
Ingredients:
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 (3 ounce) packages pancetta bacon, finely chopped
  • 5 large potatoes, peeled and thinly sliced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 4 cups shredded Mexican cheese blend
  • 1 pint heavy cream
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then give a delicate swipe of grease to a lovely medium baking dish.
  • In a skillet over medium heat, sauté the onion and pancetta in melted butter until the onion is tender and the pancetta is cooked through.
  • Create beautiful layers in the baking dish by alternating potato slices, salt, pepper, pancetta and onion mixture, spinach, and cheese. Finish with a generous pour of heavy cream over the top.
  • Cover and bake in a preheated oven for 1 hour. Uncover and bake for an additional 30 minutes until bubbly and lightly browned.
