Creamy spinach ziti with nutmeg, cream cheese, and spicy tomatoes.
Ingredients:
  • 8 ounces ziti pasta
  • 1 (14.5 ounce) can Italian-style stewed tomatoes
  • 0.125 teaspoon crushed red pepper flakes
  • 4 ounces fresh spinach, washed and chopped
  • 2 ounces cream cheese
  • 0.25 teaspoon ground nutmeg
Instructions:
  • In a large pot of boiling salted water, cook ziti until al dente, about 12 minutes.
  • In a medium non-reactive pan, gently warm tomatoes and hot pepper flakes over medium-low heat, gently breaking up the tomatoes as needed.
  • After draining the pasta, place it back into the warm pan. Add spinach, cream cheese, and nutmeg, and cook over low heat while stirring until the spinach wilts (approximately 1-2 minutes). Next, pour the tomato sauce over the spinach ziti and gently toss to combine all the ingredients.
