Creamy Ziti Florentine

Whip up a quick and easy Creamy Ziti Florentine with spinach, green onions, lemon, and ricotta cheese. A perfect dish for busy weeknights!
Ingredients:
  • 1 pound dry ziti pasta
  • Salt and pepper, to taste
  • 1 bunch scallions, whites and light green parts only, thinly sliced
  • 4 cups (about 4 ounces) baby spinach leaves
  • 1/2 cup freshly grated Parmesan or Pecorino Romano, plus more for garnish
  • Zest of one lemon
  • 1 cup (about 8 ounces) fresh ricotta
  • 1/2 cup loosely packed torn basil leaves
  • 1/4 cup chopped fresh parsley
Instructions:
  • Prepare the pasta: Boil a large pot of generously salted water. Add the ziti and cook for 7 to 8 minutes until it is al dente. Save 2 cups of the starchy pasta cooking water and then drain the pasta in a colander.
  • While the scallions and spinach are being cooked, heat olive oil in a large skillet over medium heat. Sauté the scallions for 2 minutes until softened, then add the spinach and cook for 1 to 2 minutes until wilted, stirring occasionally.
  • Combine the cooked ziti with 1/2 cup of pasta cooking water in the skillet. Mix in Parmesan, lemon zest, ricotta, basil, and parsley vigorously. Add additional pasta water if needed. Season with salt and pepper to taste.
  • To serve the pasta, portion the ziti into shallow bowls and generously sprinkle with additional Parmesan cheese.
