Creamy jalapeno popper chicken ziti with 4 cheeses - a delicious twist on classic baked ziti.
Ingredients:
  • 2 pounds skinless, boneless chicken breast halves
  • 1 cup chicken broth
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion flakes
  • 1 teaspoon minced garlic
  • 6 slices bacon, diced
  • 3 medium jalapeno peppers - stemmed, seeded, and minced
  • 0.25 cup diced onion
  • 0.5 cup grated Parmesan cheese
  • 1 (16 ounce) package ziti pasta
  • 1 (16 ounce) jar Alfredo sauce
  • 1 (8 ounce) package shredded pepper Jack cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup crushed buttery round crackers
  • 4 tablespoons salted butter, softened
Instructions:
  • Place chicken breasts in a medium slow cooker and cover them with chicken broth. Season with salt, pepper, onion flakes, oregano, and garlic. Make sure the chicken is fully submerged in the broth.
  • Slow cook the chicken until it's fully cooked and no longer pink in the center, either on low for 5 to 6 hours or on high for 3 to 4 hours.
  • Preheat the oven to 375 degrees F (190 degrees C and grease a 9x13-inch baking dish 30 minutes before the chicken is done cooking.
  • Bring a generous pot of salted water to a lively boil. Cook ziti until al dente, about 11 minutes, stirring occasionally. Drain and set aside.
  • As the ziti cooks, sauté bacon, jalapenos, and onion in a small skillet over medium-high heat until onions are tender and bacon is crispy, about 5 to 7 minutes. Transfer the mixture to a small mixing bowl and combine with cream cheese, mozzarella, Parmesan, and mayonnaise until thoroughly mixed.
  • Transfer the tender chicken from the slow cooker to a spacious bowl. Use two forks to effortlessly shred the chicken into bite-sized pieces. Next, combine the cooked ziti and creamy Alfredo sauce, ensuring they are thoroughly mixed together.
  • Spread half of the chicken-ziti mixture in the baking dish, layer with pepper Jack cheese, evenly spread jalapeno popper filling, then add the rest of the chicken-ziti mixture and top with 1/2 cup mozzarella.
  • Combine crushed crackers, Parmesan cheese, and butter in a small bowl, then sprinkle over the pasta dish.
  • Cook in the preheated oven until the cheese is melted and lightly golden, for about 25 to 30 minutes. Take out of the oven and serve right away.
