Indulge in these irresistible jalapeno popper stuffed chicken breasts - creamy cheese and spicy jalapenos, perfectly baked to golden perfection.
Ingredients:
  • 1 sleeve buttery round crackers (such as Ritz®), crushed
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1 cup bread crumbs
  • 2 eggs, beaten
  • 4 boneless, skinless chicken breasts
  • 1 (8 ounce) package cold cream cheese, cut into thin strips
  • 4 tablespoons finely diced jalapeno peppers
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x11-inch baking dish.
  • In a bowl, mix together crushed crackers, garlic powder, salt, and pepper. In another bowl, place bread crumbs. Pour beaten eggs into a third bowl.
  • Flatten chicken breasts using a tenderizer. Top each with two strips of cream cheese and 1 tablespoon of diced jalapeno. Fold together, then coat in egg, bread crumbs, egg, and crackers. Secure with toothpicks or kitchen twine and place in the baking dish.
  • Roast in the oven until chicken is cooked through with no pink in the middle and juices run clear, approximately 45 minutes. Use an instant-read thermometer to ensure the center reaches 165 degrees F (74 degrees C).
