Jalapeno Popper-Stuffed Meatloaf

Creamy and spicy stuffed meatloaf with cream cheese, Cheddar cheese, and jalapeno filling.
Ingredients:
  • 1 pound ground beef
  • 0.66666668653488 cup bread crumbs
  • 2 eggs, whisked
  • 2 teaspoons salt, divided
  • 1.5 teaspoons ground black pepper, divided
  • 1 cup grated Cheddar cheese
  • 3 jalapeno peppers, seeded and diced
  • 1 teaspoon garlic powder
  • aluminum foil
  • 3 tablespoons barbeque sauce, or as needed
  • 2 tablespoons grated Cheddar cheese, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine ground beef, bread crumbs, eggs, 1 teaspoon salt, and 1 teaspoon pepper in a large bowl until evenly mixed. Firmly press 3/4 of the mixture into a loaf pan, creating a well in the center.
  • Combine cream cheese, 1 cup Cheddar cheese, jalapeno peppers, garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Press half of the mixture into the center of the meatloaf. Top with the remaining meat mixture, sealing the edges. Wrap in aluminum foil.
  • Bake until fully cooked, 30 to 40 minutes, ensuring the center reaches 160 degrees F (70 degrees C) when tested with a thermometer. Remove from oven, brush with BBQ sauce, and sprinkle with 2 tablespoons of cheddar. Preheat broiler with rack 6 inches from heat source.
  • Broil the meatloaf until the barbecue sauce is bubbly and the cheese is melted, for about 2 to 3 minutes.
